The Pre-Holiday Diet

Our Festive Quinoa Salad is a delightful and nourishing addition to your holiday menu, bringing together vibrant flavors, wholesome ingredients, and a burst of seasonal goodness. Packed with nutrient-rich quinoa, roasted vegetables, and a tangy pomegranate vinaigrette, this dish not only satisfies your taste buds but also contributes to your well-being. Let's dive into this easy-to-make, nutrition-packed recipe that adds a touch of health to your festive feasts.


Ingredients:

  • 1 cup quinoa, rinsed

  • 2 cups water or vegetable broth

  • 1 cup cherry tomatoes, halved

  • 1 cup butternut squash, diced

  • 1 cup Brussels sprouts, halved

  • 1 tablespoon olive oil

  • Salt and pepper to taste

For the Pomegranate Vinaigrette:

  • 1/4 cup pomegranate juice

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey or maple syrup

  • Salt and pepper to taste

Toppings:

  • 1/2 cup pomegranate arils

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped walnuts (optional)


Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked and water is absorbed. Fluff with a fork and set aside.

  3. On a baking sheet, toss cherry tomatoes, butternut squash, and Brussels sprouts with olive oil, salt, and pepper. Roast in the preheated oven for 20-25 minutes or until the vegetables are tender and slightly caramelized.

  4. While the vegetables are roasting, prepare the pomegranate vinaigrette. In a small bowl, whisk together pomegranate juice, olive oil, balsamic vinegar, Dijon mustard, honey or maple syrup, salt, and pepper.

  5. Once the quinoa and roasted vegetables have cooled slightly, combine them in a large bowl.

  6. Pour the pomegranate vinaigrette over the quinoa and vegetables, tossing gently to coat.

  7. Garnish the salad with pomegranate arils, chopped fresh parsley, and optional chopped walnuts for added crunch.

  8. Serve the Festive Quinoa Salad as a vibrant and nutritious side dish at your holiday gatherings.
